Herbal Vinegar Extracts

Our vinegar extracts are made with fresh plant material picked at the height of potency. They are then steeped in organic raw apple cider vinegar for 6 weeks, strained and offered to you. Apple cider vinegar is a rich source of vitamins and minerals on it's own and when combined with herbs the nutritive value is significantly increased. Vinegar extracts vitamins and minerals from plants and assists the body in absorbing nutrients.  Infused vinegars can be included in your favorite recipe and/or added to water and drunk on a regular basis. We love to add herbal infused vinegars to our homemade salad dressings, marinades and switchel drinks!! They also are fabulous as a hair rinse and facial toner.

Burdock Root Vinegar (Artctium lappa)  Burdock root is rich in vitamins and minerals, it's long tap root reaches deep down and pulls nutrients from the soil. These nutrients are made available by steeping the fresh root in vinegar. T It also contains inulin, a natural soluble dietary fiber. Inulin is also a prebiotic, which means that it has been proven to increase the activity of beneficial bacteria and prevent the growth of harmful bacterial in the digestive tract. Shake this vinegar before use to incorporate the inulin, which will sit on the bottom

Chive Vinegar (Allium schoenoprasum )  Chives, a member of the onion and leek family, are a fragrant herb with a mild onion flavor.  Chives have many essential minerals, including cardiac-friendly potassium, bone-strengthening calcium and blood-building iron. They are high in folic-acid (a B vitamin) vitamin A, vitamin K and vitamin C. The high vitamin C content in chives can help prevent colds as well as speed recovery if a cold develops. The sulfurous compounds in chives are natural expectorants. Chives are also a source of iodine. When steeped in vinegar  nutrients are more more easily absorbed by the body.

Dandelion Root Vinegar (Taraxacum officnale) Dandelion is the ultimate tonic. High in potassium, nourishing to the liver, contains inulin, Aids digestion, nourishes the blood, For the breasts dandelion has been known to reduce sores, growths, swollen lymph, cysts, nodules, and possibly even acts as a preventative medicine for breast cancer. It stimulates the production of mother’s milk and aids in healing mastitis.

Nettle Vinegar (Urtica dioca) This vinegar has had fresh young nettle leaves steeped in it for 6 weeks, allowing the nutrients to be released into the vinegar. We use organic unfiltered apple cider vinegar, which offers its many healing qualities and assists nutrients in being absorbed when ingested. Use this anywhere you would vinegar-marinades, salad dressings etc or simply put a tablespoon or two in a glass of water and drink!!

Rose Petal  (Rosa sp) This vinegar is tasty and nourishing. It is slightly astringing and offers the body a tonifying affect. It is delicious in a salad dressing when combined with our rose petal infused honey!! This is my favorite cosmetic vinegar: it can be used on it's own or combined with nettle as a hair rinse and also makes a lovely facial toner. Roses are also soothing to the heart and emotions.

Herbal Infused Honey 

Herbs infused in honey offer unique flavors and qualities to the honey. We harvest plants at the peak of their potency and steep them in local raw honey for several weeks. The honey is then strained and made available for use in tea, salad dressings, marinades and as an herbal remedy. We love to combine them with infused vinegars in the above mentioned preparations as well as in switchel drinks.

Lavender (Lavendula sp) This honey is delicious and relaxing.  It has the savory flavor of lavender and is fabulous added to a cup of tea, salad dressings, marinades, or a glass of warm milk. This honey can also be applied topically to minor scrapes and burns.

Rose Hip (Rosa rugosa) This honey has a slight sour flavor; similar to citrus, reflecting it's high vitamin C content. Fresh rosehips contain the most vitamin C and this is the best way we know to preserve those qualities. Rosehips also contain carotenes and caratanoids, which assist in the absorption of vitamin C and other nutrients. We love to add this to yogurt and kefir shakes as well as make sparkling beverages.
