Fermentation is a food preservation technique as well as an approach to preparing delicious, nutritious food. Fermentation has been around at least as long as fire has been used to cook food. People around the world ferment vegetables, fruit, grains, milk, meat and beverages. This course will provide an overview of the principles, techniques and history of fermentation. Through lecture as well as hands on experience and delicious samples, participants will leave with an understanding of the common traits and differences associated with fermenting food and beverages.
